Culinary Director Stephen Nairn is coming together with acclaimed butcher Gary McBean of G. McBean Family Butcher for an evening dedicated to whole-animal craft, provenance, and exceptional sourcing as part of Broadsheet’s DineOut Festival 2026.
A Prahran Market institution since 1979, G. McBean Family Butcher has long set the standard for premium produce and traditional craft. For this special dinner, Gary steps beyond the market to bring a curated selection of premium and underutilised cuts directly into the Omnia kitchen.
The menu is shaped around the whole animal and Nairn’s modern European, produce-led approach—highlighting depth of flavour, technique, and thoughtful sourcing, with dishes designed to showcase both the familiar and the unexpected.
This is a rare opportunity to experience two experts in their fields working side by side in one kitchen, with an emphasis on craft, education, and exceptional produce.
